Cashew is rich in magnesium and phosphorus. Magnesium plays an important role for strengthening of bones and for the activity of enzymes. Cashew contains also iron which is an important part of hemoglobin, a constituent element of the red blood cells. It has a low glycemic index (2.86 for 50 g). This makes it a recommended part of the diet of the overweight people and diabetics. Cashew nuts are offered roasted most often as a relish to high-alcohol drinks. Recently, there has been a tendency to add them to salads.
